Happy New Years Slow Roasters!  I am so excited to have another fabulous year ahead of us.  We are starting off this amazing 2013 with an incredible and surprising treat.

A while back we received a bottle of Conjure Cognac to sample.  Truth be told, I passed it off to Chad.  I had tried cognac's in the past and they were a bit much for me.  But, after opening this bottle Chad brought it to me and I was pleasantly surprised by the smooth and luxurious flavor.

It didn't take long for Chad to take the bottle of Conjure back to his mixology lab.  I was astonished by the cocktails that he created.  Fabulous rich cocktails with incredible flavors.  We truly were in awe of how well this cognac mixed with other spirits.  We finally needed to choose just one to bring you today.

Our favorite is the Cranberry Crave Cocktail.  It's a mixture of Conjure Cognac, orange flavored liqueur, amaretto and cranberry juice.  It is a bright, rich, full bodied posh cocktail.  Conjure and the orange flavored liqueur come together and meld perfectly.  The amaretto and cranberry juice add a sweetness and luminosity that takes you to a whole new place.  This is the perfect cocktail for every occasion, one that will surely impress your guests.

Cranberry Crave Cocktail
serves 1

1 ounce Conjure Cognac
1 ounce orange flavored liqueur
2 ounces amaretto liqueur
2 ounces cranberry juice
ice

Combine all ingredients in a cocktail shaker.  Strain ice and pour into a cocktail glass. Serve and enjoy.

Meat Lover's (No Bean) Chili Recipe

I was challenged to see if I could make a low-carb, no bean chili. I know there are lots of people who don't need beans in their chili. 

I am not one of them.

or at least I THOUGHT I wasn't one of them. I stand corrected. Very very very corrected.

This is a great chili --- it has all the spice, kick, texture, and heartiness of chili but doesn't have a single bean.  I hate it when I'm wrong.

The Ingredients.
serves 8


2 pounds beef stew meat (frozen is fine)
10 ounces smoked andouille sausages, sliced
1 (14-ounce) can diced tomatoes (whole can)
1 onion, peeled and diced
4 cloves garlic, minced (or about 2 teaspoons garlic powder)
1 tablespoon cumin
2 tablespoons chili powder
1 teaspoon kosher salt
2 cups beef broth

The Directions.

Use a 6-quart slow cooker. I didn't brown anything for this recipe, but merely plopped it all in and turned the slow cooker on. Load everything into your cooker --- meat, sausages, tomatoes, onion, garlic, and all the seasonings. Stir in the broth. Cover, and cook on low for 8 to 10 hours. For chili, the longer the better, in my opinion -- get the flavors to really meld together and provide the meat an opportunity to fall apart.

If you'd like, you can help the meat out by shredding it completely with two large forks, or you can even pulse a few times with a handheld stick blender to naturally thicken the gravy/sauce (what do you call the juice in chili?). 

Serve with your favorite toppings. My kids really like the Scoops chips that Tostitos puts out -- they ate their bowls that way.

The Verdict.
I served this on a chili night to three other families, because I was eager to test out a no-bean version. The crock was scraped clean! I've made quite a few chilis the past few years, and love having a new one to share. I think you'll really enjoy it.

Hello, My Friends!

I made my first soup of the season today and thought I would share! It's a variation of my Spicy Bean & Veggie Soup recipe with fresh green beans in place of zucchini, and an extra can of tomato sauce thrown in the mix. With the generally cold and dreary weather as of late, this warm and hearty soup definitely hit the spot!

I start a new job tomorrow and with how hectic things have been with packing, moving, and unpacking, I wanted to make sure to have some quick and healthy leftovers when I get home this coming week. Thank goodness my kitchen is finally unpacked and organized!

I haven't posted any new recipes in a while due to the move and having all my cooking stuff packed away, but I have a few things in mind and hope to get something new posted in the next couple of weeks.

Sweet & Spicy Grilled Cheese on Sliced Pugliese

The other day I was in the grocery store, wrestling to make my way through the hordes of holiday shoppers picking up their last minute Christmas dinner items (I'm glad to know I'm not the only one who waits until the last minute - high five, guys!), and I noticed these really wonderful looking, golden pineapples. 
This triggered a memory of a recipe I had seen recently for a baked, rice stuffed pineapple dish, and I immediately thought wouldn't that be the perfect side dish to bring for Christmas dinner?! I had visions of presenting this perfectly prepared dish, oohs and awws abounding as I placed it directly in the center of the table (ha!), so into the basket it went along with all my good intentions...then in a bag...then on the counter where it took up residence - long past the holiday festivities. My good ole friends Lazy and TV convinced me that it was too much trouble! (Perhaps it's time to make some new friends in the new year?)
Anyway! There was a point to this story, which was that I needed to do something with this miserable pineapple that I bought before it turned to mush on my kitchen counter. So it got demoted from Christmas side dish extraordinaire, to a sweet and spicy grilled cheese! Sorry pineapple!

Getting Started


There's really not much to this recipe - it's a grilled cheese. Unless you've been living in a grilled cheeseless world (the horror!), then you know what to do. Butter the outer sides of the bread; layer on the pineapple slices, jalapeno, and cheese; and grill it up! I used my George Foreman Grill and set the timer for 2 minutes - perfect!

Wrapping it Up


I liked the sweet/spicy combo on this one, which I've been kind of obsessed with lately, and it is so easy to make for a quick lunch or dinner. I also love anything with cheese and bread, so it was definitely a winner in my book! The pugliese makes small slices, so you may want to make more than one sandwich or add a side dish of some kind if you want to upgrade it from snack status. The only thing I would have done differently is maybe adding more pineapple to help the sweetness cut through the creaminess of the cheese - let me know what you think!

2 slices pugliese (or other heartybread that will stand up in the panini maker)butter for grillingPineapple, thinly sliced, to tasteSliced jalapenos to taste1-2 slices muenster cheese
