Strawberry Hootenanny


A few days ago, whilst perusing Pinterest, I came across aninteresting breakfast recipe called “hootenanny,” aka oven pancakes. First ofall, the recipe looked easy as pie – 1 cup milk, 1 cup flour, 6 eggs, 1/4 tspsalt: blend and bake (how simple is that?). Secondly, it looked delectable withthe way it bubbled up and browned around the edges; I could almost taste it!And lastly, but certainly not leastly, it’s called hootenanny…hootenanny!! How could I not give it a try? 
Of course, I couldn’t leave well enough alone,so I added yummy strawberries on top before baking, which made a very delicious addition (plus, look how pretty!). I might make a couple more changes next time, butoverall I liked how the recipe turned out. Very yummy!
Getting Started

If you’ve never had hootenanny before, which I never haduntil trying this recipe, it’s a little unexpected. Personally, I think callingthem oven pancakes is a little misleading; if I hadn’t read the recipebeforehand, which occurs more often than it should, I probably would have just pouredpancake batter in the baking dish and called it a day (which I still want totry, by the way). My recipe called for 6 eggs, and they definitely contributeto the texture and taste (but not in a super eggy way, if that makes sense atall). To me, it was reminiscent of pancakes, biscuits, French toast, andquiche. It was kind of weird, but I liked it!
Okay, so getting to the actual recipe; as I previouslymentioned, it’s simple as pie! Using a mixer, blend together the flour, milk,eggs, and salt. Pour into a greased, 13x9” baking dish, and set aside. Next,slice your strawberries, and mix with the sugar until the granules havedissolved. Add the strawberries to the baking dish, pour the melted butter ontop without blending, and bake at 400 degrees for approx. 20min, or untilpuffed and starting to brown. Slice it up, drizzle with maple syrup, and enjoy!
Additional Notes
From what I have seen of other hootenanny recipes, it’sreally supposed to puff up all over the place. Mine didn’t puff up as much as othersand I think this was due to the strawberries weighing it down. Also, mine was alittle doughy in the very center, but I think this was due to the fact that Ihave a smaller pan, and it was a little thick. I don’t think this will be aproblem if using a 13x9” dish. Next time I will use less batter for mine, or Imight mix up the strawberries and add them on top AFTER the hootenanny isbaked. Another thing I noticed after doing a little research is that some recipes only use 4 eggs. I might give this a try as well. It just gives me anexcuse to make more of this yummy dish!

This has to be one of the simplest recipes I’ve ever made.It was quick, easy, and really yummy. Give it a try and let me know what youthink!
