Let me tell you, I was not disappointed. It. Was. So. Good. And much healthier than the meat version I used to love. This recipe definitely makes the cut for my weekly rotation!
Getting Started
Once you have all of your ingredients chopped, diced, sliced, and measured, this recipe is really a snap. Start by sautéing the mushrooms with a little olive oil over medium high heat until tender. Add in the next 6 ingredients and sauté until the paprika and onion powder have dissolved and the mushrooms are well coated. Add in garlic, rosemary, and thyme, and cook for another minute or so before removing from heat.
To assemble the gyros, top your flatbread (get the kind from the bakery section if you can) with desired amount of Tzatziki Sauce, lettuce, cucumber, mushroom mixture, tomato, onion, and feta cheese…then enjoy the heck out of it!

That’s all there is to it! Easy and seriously yummy - if you don’t love these veggie gyros, I might have to question our friendship...okay not really, but I do hope you like them as much as I did! ;)
